Holiday Recipes

Festive Cheeseball

4 large jalapenos diced
1/2 can beets diced
16oz soft cream cheese

Combine ingredients and roll into a ball. Serve with tortilla chips. A delicious sweet, spicy treat. Great for the holidays with the Christmas colors.

Inspiration: On our cruise to Alaska, Ryan ordered a Jalapeno, beet quesadilla, and it was delicious. I thought the combination would made a great cheese ball.

Apple Cranberry Pie

1 package of 2 pillsbury refrigerated pie crusts
5-6 medium apples
1/2 can jellied cranberry sauce (no berry)
nutmeg and cinnamon
1 cup sugar
2 Tablespoons flour
2 Tablespoons butter

1. slice apples and mix with spices and sugar
2. Add cranberry sauce and flour and mix until coated
3. put in buttom crust and top with 2 pats of butter and upper crust.
4. Cut design in upper crust to vent and sprinkle upper crust with some sugar
5. Bake at 300 for 30 minutes. Lower to 250 for an hour and a half.

Inspiration: My husband's love of cranberry sauce and my mother-in-laws way way of baking pies at low temps for a long period of time.

Pumpkin Trifle

pudding layer
1 large package vanilla pudding mix
1 small carton cool whip
1/4 teaspoon nutmeg
1/2 cup milk

Pumpkin layer
1 small can unsweetened pumpkin
1 cup confectioners sugar
16 oz whipped cream cheese
1 Tablespoon pumpkin pie spice

other layers
Graham cracker crumbs
1 small carton of cool whip
dark chocolate shavings

1. combine pudding mix, milk, nutmeg, and one carton of cool whip in small bowl
2. blend pumpkin, sugar, cream cheese and pumpkin pie spice in small bowl
3. layer pumpkin mixture, followed by crumbs, followed by pudding, followed by crumbs until ingredients run out or bowl is filled.
4. Top with cool whip, a sprinkling of pumpkin pie spice, and dark chocolate chips or shavings
